Nightmare Critters Are Not in the Roster
The eight Nightmare Critters belong to the Chapter 4 toy line. They are not listed as playable characters in Escape from Playtime.
I compared the Fandom Nightmare Critters page with the October 21 roadmap. The roadmap names new experiments and areas, not this toy line.
The line, and the trivia
Fandom lists Baba Chops, Icky Licky, Rabie Baby, Allister Gator, Simon Smoke, Poe, Touille, and Maggie Mako. They are a rival line to the Smiling Critters, introduced around Chapter 4.
A Fandom trivia line says the Nightmare Critters plush toys were retextured during Escape from Playtime development even though they do not appear in the game. That is an asset note, not a character unlock. It still needs an in-game file check.

Questions
Can I play as Baba Chops?
No official roster or DLC note says so. The playable toys are the Smiling Critters.
Could they be added later?
Possible, but the published roadmap does not name them.
